I have decided after intputing about 100 products into 3 different main categories, that the navigation would make a lot more sense to our customers if these 3 main categories were all sub-categories of a new main category. I know I can easily set up a new main category, but is there any way to "move" all products associates with one main category to a sub-category?

There is not an easy way via the admin that I know of, but with DataPort you could download your products, change their category locations enmasse in Excel sheet, and then reupload. Have you heard much about DataPort? Here's a link:
