I want to see what a customer gets and also edit those e-mails.

The "thank you for your order" and "your order shipped" e-mail.

I'm at Order Email Editor but all that seems to be is a header / footer. Is that of all e-mails?

It is currently not possible to change the wording of these emails. To see what the emails look like you need to place a test order, which I think they should have a test button.

However, I believe Josh is currently on this issue so that we are able to edit the wording of these emails. Right now all you are able to do is edit the header and footer of these emails via the admin panel.

Yes it does.

But as Krazy said Josh is on the ball with this one he is going to make it so owe can really super customize all emails being sent by the software.
