You click on a product category to go to the list of products in that category. The images are fairly large (200x200). There is no secondary "click to enlarge" page for each product. They buy from the list.

I guess I am asking if it is possible in the next version to disable the individual product page and have the customer buy from the product category list.

This makes no sense for most stores, but it is a good idea for ours.

You can use the Quick Order in 7.3. It is a nsScript function that can be placed on any page, and it has a category filter and a simple search functionality. You can also allow inline purchase, but neither of these will show options to purchase inline if you use variations or personalization.
