How do I remove certain credit card from the options for customer checkout? I want to remove JBT and others from the Card Type.

I also would like to know how I can accept debit cards. Does my authorize.net and monstermerchant account allow debit cards.

I am not sure I understand your question correctly, do you want certain options removed permanently or just for certain customers.
Permanently would be by going to "Order Information" than "Credit Card List".
As far as Debit, if it is a Visa Debit than it primarily works like a Credit Card and Authorize.net will take it. You just put Visa Debit in your list. I am not sure about other debit cards, but most these days can be entered in just like a credit card.
