When I go to Site Wide Settings > Product List and Details > try and change Number of Products to Display per Page I get a window that says: The email content – Email from Address is a required field, and it wont let me change it.

What's up with that? It happens in Firefox and IE.

Under Site Wide Settings > Email Content, put something in the "email from address" field. The site wide setting tabs are all saved as one unit, so if you have a missing field that is required to be filled in on any of the tabs it won't let you save, regardless of which tab you actually click the save button on.
